Strawberry Cupcakes

I love strawberries, so of course I had to try this recipe

Strawberry Cupcakes

I made a few adjustments, just because I am lazy 🙂

1Cup butter
2 & half Cups of Sugar
2 Egg Yolks
5 Egg Whites
1 Teaspoon Vanilla
1 Teaspoon Red Food Coloring
1 & 1/4 Cups of Pureed Strawberries
3 Cups Cake Flour, Sifted
1 Teaspoon Baking Powder
1 Teaspoon Baking Soda
Pinch of Salt
1 Cup Buttermilk (I make my own with 1 Cup milk & 4 teaspoons of white vinegar)

The only change I made to this recipe was I did not use Cake Flour, I was just to lazy to go get some and I have lots of all purpose flour so that is what I used 🙂

I love to see pictures when I bake, just so I know I am on the right page so I have added some, not sure how much it really helps but here you go

Pureed Strawberries
 Preheat oven to 350 degrees.
In medium bowl, beat butter and sugar for about 3 min.
add Egg Yolk one at a time, then the vanilla, food coloring and strawberries, beat for additional 3 minutes 
Sift dry ingredients and add to butter/egg mixture alternately with buttermilk, starting with dry and ending with dry ingredients

Mix just  until combined.  In another bowl, beat egg whites until stiff and add in increments of 3 to cake batter, being careful to fold in carefully and gently.  Bake for about 16 minutes or until toothpick comes out clean.

I like to freeze my cupcakes until I am ready to frost them, that way they stay fresh.

I used a cream cheese frosting on these cupcakes and they were very good.
